Head Chef / Robert Doll
Starting his career at the iconic Ritz Hotel in London, Robert has spent over a decade honing his skills in some of the world’s best restaurants. He quickly discovered a passion for fine dining, working at several Michelin star rated restaurants including Lombard Street and Gordon Ramsay’s Maze in London and Studio Restaurant in Copenhagen.
Closer to home, he’s been part of the award-winning team at Momofuku Seibo in Sydney, and was the head chef at Gastro Park and Oscillate Wildly.
As head chef at The Royal Exchange, Robert continues his culinary journey with a menu of elegant dishes celebrating classic French and British cuisine.
